Spain boasts cuisine that is wonderfully rich and varied,
ranging from simple tapas inspired dishes of exquisite olives to
feasts of seafood delicacies. In Spain, the diverse
geography, culture and climate bring ingredients together in a
special way to create delicious cuisine.
The two basic ingredients of all Spanish Food are olive oil and
garlic. Ham,
seafood, cheese, sausage (in particular chorizo), beef, lamb, pork
and vegetables all heavily influence Spanish cuisine, with the main
flavours coming from the addition of onion, oregano, rosemary, thyme, paprika and
bay leaves.
Tapas are a Spanish favourite which have gained international
recognition as tasty finger foods. The word "tapa" means
cover or lid and a common explanation of the use of tapas is that
bar workers would place complimentary tapas on top of patrons' wine
glasses to protect it from flies. Tapas can be served cold or
warm and can be something as simple as a piece of toasted bread,
rubbed with garlic and dipped in olive oil or more extravagant such
as meatballs in tomato sauce or chorizo cooked in wine. They
can be eaten individually as a snack or served with a group of
related dishes for a full meal. If you are interested in serving
tapas next time you are entertaining, pick up a selection of
spanish olives (stuffed and/or plain), spanish cheeses, chorizo,
and fresh crusty bread from your local supermarket and serve on
