Gregg's Cinnamon Quills
Cinnamon is from a tropical, evergreen tree of the laurel
family, native to Sri Lanka, that grows up to seven metres in its
wild state. The outer bark, cork and the pithy inner lining are
scraped off and the remaining bark is left to dry completely, so
that it curls and rolls into quills.
Cinnamon is a mild, warming, sweet-flavoured spice used in both
savoury and sweet dishes, however in Western cooking is most often
used in baking and desserts. Whole cinnamon quills keep their
flavour for a long time and tend to be used to impart flavour to
tagines, stews and curries but are removed before serving.
