The fennel plant is native to southern Europe and Asia and is related to parsley. In early autumn, the perennial herb is a mass of golden flowers and the flower heads are collected and dried before the seeds ripen.

The flavour of fennel seed is like liquorice, sweet, and with a slightly bitter aftertaste. The seeds are used traditionally to complement fish, breads, pork and in curries from India and Malaysia.

Hints & Usage Suggestions

  • Fennel seeds are excellent rubbed with salt onto pork crackling, or onto meat before barbecuing or roasting.
  • Add to bread dough, or brush the top of cheese scones or muffins with milk and sprinkle with fennel seeds before baking.

  • Store in a cool, dry place.
