Gregg's Yellow Mustard Seeds
Mustard is one of the oldest known herbs and has been used for
as long as history has been recorded. Yellow mustard is indigenous
to southern Europe and western Asia and will produce spectacular
fields of yellow or white flowers when in bloom.
Yellow mustard seeds develop flavour and pungency with time and
have little or no smell, but they have a strong bite that is
released when crushed and mixed with water. This activates an
enzyme present in the seed, which in turn reacts to develop the
essential oil which gives the characteristic taste. Mustard seeds
are extensively used in meats, chutneys, processed vegetables and
relishes.
