Aioli

Calling all garlic lovers!  This Aioli is easy to make and a delicious accompaniment to many foods.  It is important to add the oil in a slow continuous stream

Preparation Time:
5 minutes

Ingredients

Method

Mix the Gregg's Crushed Garlic, freshly ground Black Peppercorns and Natural Sea Salt, egg yolks and mustard.

Add the oil slowly, mixing constantly.  After half the oil is added, introduce the lemon juice.

Continue stirring and add the balance of the oil.

Refrigerate until ready to serve.

    The calamari was cooked following our recipe for Chilli and Lime Calamari Salad - Mix 4 tsp Gregg's Chilli & Lime Seasoning with 2 Tbsp flour in a shallow dish. Dip 300g squid rings in beaten egg then in the flour mixture. Heat enough oil in a wok or deep sided pan so the squid rings will deep fry. Cook the squid rings in batches in the hot oil over medium high heat until they are golden brown. Drain on paper towels and allow to cool slightly. Enjoy!
