Bacon & Cheese Muffins

These quick and easy muffins are ideal for lunch-boxes or morning tea.

Makes 10 medium muffins

Ingredients

  • 2 cups plain flour
  • 4 tsp baking powder
  • 1/8 tsp Gregg's Ground Cayenne Pepper
  • 2 Tbsp Shreddo Quality Shortening
  • 1 cup grated cheese
  • 2 rashers bacon, cooked & diced
  • 1 egg
  • 1/4 cup oil
  • 1 1/2 cups milk, approximately

Method

Preheat the oven to 190°C. Grease 12 medium muffin tins.

Sift the flour, baking powder and Gregg's Cayenne Pepper into a large bowl. Stir in the SHREDDO Quality Shortening, cheese and bacon. In another bowl beat together the egg, oil and milk.

Make a well in the dry ingredients and add the egg mixture. Gently mix until just combined.

Spoon into the muffin tins and top with extra grated cheese if desired.

Bake for 15 - 20 minutes or until the muffins are golden brown.
