Ingredients
- 2 cups plain flour
- 4 tsp baking powder
- 1 Tbsp caster sugar
- 2 tsp Gregg's Ground Mixed Spice
- pinch of salt
- 1 cup Shreddo Quality Shortening
- 1/2 cup water, approximately
- 3/4 cup raspberry jam
- milk for brushing
Method
Preheat the oven to 180°C.
Sift flour, baking powder, caster sugar, Gregg's Mixed Spice and
salt into a bowl. Stir in the SHREDDO Quality
Shortening.
Add enough cold water to make a soft but not sticky dough. Roll
out the dough on a lightly floured board to make a rectangle about
15cm x 30cm. Spread the jam over the dough leaving 2cm around the
edges.
Brush edges with milk then roll from the short end. Press edges
together so jam doesn't spill out. Place seam side down on a baking
tray lined with baking paper. Brush off any excess flour then brush
with milk.
Bake for 30 minutes or until golden brown and serve hot with
whipped cream, custard or ice cream.
