Baked Stuffed Potatoes with Bacon & Smoked Paprika

Baked Stuffed Potatoes with Bacon & Smoked Paprika

A classic winter favourite.  Serve as part of a main meal or on their own for an easy and delicious snack.

Ingredients

Method

Preheat oven to 200°C.

Clean potatoes and prick them with a fork. Place in oven and bake for approximately 1 hour or until cooked through. Remove from oven and cool until able to hold.

Cut potatoes in half and carefully scoop out potato flesh into a bowl. Mash potato with butter, Gregg's Coriander Flakes and Salt and Pepper to taste. Stir through bacon pieces and half of the cheese. Return flavoured mashed potato to potato skins, top with the remaining cheese and sprinkle with Gregg's Smoked Paprika.

Return to oven and grill or fan-grill for 5 -10 minutes until warmed through and golden brown.

    Good to make in batches and freeze individually for future lunches.

    These were so good. Very morish. We have made often. You could use ham instead of bacon and parsley instead of coriander.
