Barbecue Pancakes with Spiced Summer Fruits

Barbecue Pancakes with Spiced Summer Fruits

These pancakes make a superb summer brunch.  Alternatively try the spiced fruit with muesli for breakfast, or with ice cream for dessert.

Ingredients

  • Spiced Summer Fruits

  • Pancakes

    • 1 1/2 cups flour
    • 2 tsp baking powder
    • 2 Tbsp caster sugar
    • 2 eggs, lightly beaten
    • 1 1/4 cup milk
    • butter for frying
    • yoghurt or whipped cream to serve

Method

To prepare the syrup, place the sugar, orange juice and Gregg's spices into a saucepan. Bring to the boil and simmer for 10 minutes then remove from the heat.

Preheat a BBQ grill plate and lightly brown the fruit on both sides then add the fruit to the spiced syrup. Set aside.

To make the pancakes, sift the flour and baking powder into a bowl. Stir in the caster sugar, eggs and milk to form a smooth batter.

Preheat a clean BBQ hot plate. Grease with a small amount of butter then pour approximately 1/3 cup of the batter onto the hot plate. Cook over low heat until small bubbles appear. Turn and cook the other side until it is golden brown.

Top the pancakes with fruit and syrup and serve with yoghurt or whipped cream.
