This simple and authentic green curry can be made with your
favourite type of meat. A fast and simple meal perfect for
the mid-week dinner dilemma.
Ingredients
- 1 Tbsp oil
- 2 Tbsp Gregg's Green Curry Paste
- 500g rump steak, cut into strips
- 200g green beans, sliced
- 1 red capsicum, sliced
- 1 Tbsp brown sugar
- 1 Tbsp fish sauce
- 1/2 cup fresh Thai or sweet basil leaves
Method
Heat the oil in a wok or deep frying pan. Add the Gregg's Green
Curry Paste and fry on a medium heat for 1 minute. Add the steak
and stir fry on high heat until it is browned.
Add the green beans and capsicum and stir fry over medium heat
for 3 to 4 minutes or until the vegetables are just cooked.
Add the brown sugar and fish sauce and stir through until the
sugar has dissolved.
Remove from the heat and toss with basil leaves.
Serve on rice.
