Our recipe for nachos will become an irresistible family
favourite and can be made with either chicken or beef. Be sure to
serve with lots of cheese, sour cream and guacamole.
Ingredients
- 500g diced chicken or beef mince
- olive oil
- 1 onion, finely chopped
- 1 can Mexican flavoured tomatoes
- 1 x 50g sachet Gregg's Tomato Paste
- 2 tsp Gregg's Crushed Garlic
- 1 tsp Gregg's Rubbed Oregano
- 1 can Mexican chilli beans
- 500g Tortilla corn chips
- 2 cups grated mozzarella
- Guacamole and/or sour cream to top
- 1 spring onion, finely chopped to garnish
Method
Fry Gregg's Crushed Garlic and onion until soft in a dash of
olive oil. Add mince/chicken and fry until browned.
Add can of tomatoes, Gregg's Tomato Paste, and Gregg's Oregano.
Simmer for 15 minutes until mince is thoroughly cooked. Add chilli
beans & mix through.
Place corn chips around the edge of four dinner plates or
bowls.
Divide the mince mixture into four and place in the middle of
each plate.
Place half a cup of mozzarella on top of each mince mixture
& grill until melted (can be served with or without
cheese).
Serve with guacamole or sour cream.
