A charming winter warmer, full of comforting flavour and
aromas.
Ingredients
- 1 Tbsp oil
- 1 onion, finely diced
- 3 - 4 tsp Berbere Spice Seasoning Blend (recipe available on this website)
- 750g chicken pieces
- 1 cup water
- 1 large potato (220g), peeled & cut into large chunks
- 2 Tbsp sliced almonds
- plain unsweetened yoghurt
Method
Heat the oil in a large saucepan over medium heat. Add the onion
and cook for 2 minutes.
Add the Berbere Spice Seasoning Blend and cook,
stirring, for 1 minute.
Add the chicken and cook for a few minutes, turning to coat the
chicken pieces in spices.
Add 1 cup of water and the potato. Bring to the boil then simmer
for 1 hour.
Remove from pan and serve with rice and garnish with almonds and
yoghurt.
