A great way to spice up your favourite vegetables, these are the
perfect side dish to any meal.
Ingredients
- 600g peeled & diced root vegetables e.g. potato, kumara, pumpkin, carrot
- 2 Tbsp oil
- 1 Tbsp Berbere Spice Seasoning Blend (recipe available on this website)
- 1/4 cup unsweetened plain yoghurt
Method
Preheat the oven to 200°C.
Place the vegetables in a roasting dish. Drizzle with the oil
and sprinkle over the Roasted Berbere Spice Seasoning Blend.
Bake in the preheated oven for 20 to 30 minutes, or until the
vegetables are golden and tender, turning frequently.
Serve with yoghurt.
