Bread & Butter Pickle

A different kind of pickle to spice up your sandwiches!

Serves:
Makes 5 qty 400ml jars

10 minutes
Cooking Time:
15 minutes
Pickling Time:
3 - 4 weeks

Ingredients

Method

Place the courgettes, onion, capsicum and salt in a bowl. Pour over enough cold water so it just covers the vegetables. Stand for 1 hour; then drain (but don't rinse).

Place the vegetables, vinegar, sugar, Gregg's Curry Powder, dry mustard and Gregg's Fennel Seeds in a large saucepan and bring to the boil.

Simmer for 10 minutes, then bottle in clean sterilised jars.

Ready to eat in about 3-4 weeks.
