Method
Place the courgettes, onion, capsicum and salt in a bowl. Pour
over enough cold water so it just covers the vegetables. Stand for
1 hour; then drain (but don't rinse).
Place the vegetables, vinegar, sugar, Gregg's Curry Powder, dry
mustard and Gregg's Fennel Seeds in a large saucepan and bring to
the boil.
Simmer for 10 minutes, then bottle in clean sterilised jars.
Ready to eat in about 3-4 weeks.
