Cheesy Herb Cobb

Easy to make and impressive to serve.  These cheesy herb cobb is a deliciously different way to start a meal.

Ingredients

Method

Cut the top from the bread. Carefully hollow out the bread by cutting around the sides of the loaf and pull the inner bread out leaving 1-2 cm in base.  Tear inner bread into bite sized pieces and reserve for serving.

Place spinach in a large microwave safe bowl, cover with cling wrap and cook in microwave for 2 minutes or until just wilted. Drain any excess liquid from spinach.

Stir in the cheese, cream cheese, onion, Gregg's Garlic and Herb Sea Salt, freshly ground black pepper and 1 tablespoon of the Coriander flakes. Return to microwave uncovered and on a medium heat cook for 5 minutes stirring every minute until the cheese is melted.

Pour into hollowed out Cobb loaf and sprinkle with remaining Gregg's Coriander Flakes. Place on serving dish with hollowed out bread pieces and lid to use for dipping.

 

Hints & Tips

If you don't have a microwave or would prefer to heat in oven:

Place the unheated filling in the loaf and put the lid on top. Wrap with aluminium foil and place in an oven preheated to 180°C for 50-60 minutes or until filling is heated through. Place the torn inner bread on a tray in oven for last 5- 10 minutes to crisp up.
