Make vegetables the highlight of the meal with this rich and
filling vegetable bake.
- 2 Tbsp butter
- 1/2 onion, finely diced
- 1/2 red capsicum, finely diced
- 2 Tbsp flour
- 2 Tbsp Gregg's Classic Roast Seasoning
- 2 cups milk
- 1/2 cups grated cheese
- 4 cups diced vegetables e.g. broccoli, cauliflower, courgette
Preheat the oven to 180°C.
Heat the butter in a saucepan over a medium heat. Add the onion
and capsicum and cook for 2-3 minutes until soft. Add the flour and
cook, stirring, for 2 minutes.
Add 1 tablespoon of Gregg's Classic Roast Seasoning to pan, then
add the milk a little at a time, stirring constantly to prevent
lumps. When all the milk is added, simmer gently for 2 minutes or
until the sauce is thick and creamy. Stir in about half of the

almost cooked. Drain and place in an ovenproof dish. Pour the sauce
over vegetables then top with the remaining cheese and sprinkle
with the other tablespoon of Gregg's Roast Seasoning.
Bake in the preheated oven for 15 minutes or until it is heated
through and golden brown.
