Chicken Green Curry

Gregg's has created the perfect blend of authentic Thai ingredients so you can create a delicious spicy green curry in minutes at home.

Ingredients

  • 2 tsp oil
  • 2 Tbsp Gregg's Green Curry Paste
  • 300g chicken breast, sliced
  • 1 small red capsicum, sliced
  • 1/2 cup green peas
  • 200ml coconut cream
  • 1 Tbsp brown sugar (optional)
  • Thai basil, to garnish

Method

Heat the oil in a wok or frying pan over medium high heat. Add the Gregg's Green Curry Paste and sliced chicken and cook, stirring, for 5 minutes. Add the sliced capsicum and cook for 1 minute. Add the peas, coconut cream and brown sugar and bring to the boil. Reduce the heat to low and simmer for 5 minutes or until the chicken is cooked, stirring occasionally.

Serve with rice and garnish with Thai basil, if desired.

Hints & Tips

Try this recipe with beef, pork or seafood. Garnish with sliced chillies or spring onion.

    Sometimes I use green beans in this recipe and for a low fat alternative I use Lite Coconut Milk.

    Love it! Love the paste as it is just hot enough, but not too hot so our 6 year old can enjoy it. I make this recipe around once a week during the winter.
