These skewers can be served as an appetiser or add rice and
salad to make a full meal. This satay sauce also goes well with
beef.
Ingredients
Satay Sauce
- 1 kg chicken breast or thigh fillets, cubed
- 2 red onions, cut into eighths
- 10 skewers, soaked in water
Method
To prepare the satay sauce, place the peanut butter, Gregg's
Sweet Chilli Sauce, coconut cream, cider vinegar, soy sauce,
Gregg's Crushed Garlic and Gregg's Crushed Ginger into a saucepan.
Bring to the boil, stirring, then simmer for 8 minutes.
While sauce is simmering, thread the chicken and onion pieces
onto skewers.
Remove ½ cup sauce from pan and brush over the chicken skewers.
Keep the remaining sauce warm.
Place skewers on a preheated BBQ or under a preheated grill and
cook for 5 to 6 minutes on each side or until the chicken is cooked
through.
Serve the skewers with warm satay sauce.
