This quick and easy meal is perfect for dinner and is sure to
become a family favourite - simply adjust the Chilli and Lime
Seasoning to suit.
Ingredients
Marinade
- 600g diced lean pork
- 1 Tbsp oil
- 4 cups sliced fresh vegetables
- 1/4 cup coconut cream
Method
Place the marinade ingredients in a plastic bag or bowl and mix
together. Place pork pieces in the marinade and refrigerate for at
least 1 hour.
Heat the oil in a wok or deep frying pan.
Add the pork and stir-fry over high heat until it is brown. Add
vegetables and continue stir frying until the pork is cooked and
the vegetables are still crisp.
Stir through the coconut cream and serve with rice or
noodles.
