Ingredients
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 Tbsp Gregg's Ground Mixed Spice
- 1/2 cup chopped toasted nuts, e.g. almonds or hazelnuts
- 1/2 cup chocolate bits
- 3 eggs
- 3/4 cup caster sugar
- 1 tsp vanilla essence
Method
Preheat the oven to 180°C.
Line a baking tray with baking paper.
Sift the flour, baking powder and Gregg's Ground Mixed Spice
into a bowl. Stir in the nuts and chocolate bits.
In another bowl, whisk the eggs, sugar and vanilla essence
well.
Pour the egg mixture into the flour mixture and mix until
combined. Turn out onto a lightly floured board and divide the
mixture in half. Shape each half into a log and place on baking
tray. Place in the preheated oven and cook for 25-30 minutes or
until the logs are firm and golden brown.
Remove from the oven and place on a rack to cool.
When cool, cut into thin slices. Place on baking trays and
return to oven and cook again for 15-20 minutes or until the
biscotti are golden and crisp.
