Choc Coffee Self Saucing Pudding

Fulfil your chocolate fantasy with our coffee choc self saucing pudding.  This dessert treat is truly decadent - crunch on the outside with a fudgy chocolate centre.

Ingredients

  • 1 1/4 cups self raising flour
  • 1/4 cup cocoa powder
  • 2/3 cup caster sugar
  • 1 egg, lightly beaten
  • 1 Tbsp Gregg's Rich Roast Instant Coffee
  • 100g dark cooking chocolate, broken into pieces
  • 3/4 cup milk
  • 90g butter
  • Chocolate Sauce

    • 1 cup brown sugar
    • 2 cups boiling water
    • 1/4 cup cocoa powder

Method

Preheat oven to 180°C.

Grease a deep 2 ¼ litre ovenproof dish.

Sift the flour and cocoa powder into a large bowl. Mix in the sugar, then add the egg.

Place the Gregg's Rich Roast Instant Coffee, chocolate, milk and butter in a saucepan and cook over low heat until melted. Add to the flour and mix well then spoon into dish.

Place the brown sugar and cocoa powder in a bowl and pour water over. Stir to dissolve then gently pour over the pudding.

Bake for 50 minutes.

Serve with freshly whipped cream, custard or hokey pokey ice cream.
