This rich Chocolate Christmas Pudding is the perfect ending
to any Christmas meal. While still bursting with traditional
Christmas pudding flavour, the addition of chocolate will make it a
favourite for the whole family.

Place the butter, sugar, salt and spices into a large bowl. Beat
until the mixture is light and creamy. Add the melted chocolate and
beat until the mixture is smooth. Beat in the eggs, one at a time.
Fold in the flour, mixed fruit and baking soda previously dissolved
in the boiling water. Lastly, add the brandy and orange juice.
Grease a 2 litre pudding basin and pour in the mixture, making
sure there is 2cm spare at the top to allow the mixture to rise in
the basin. Fit a sheet of baking paper and secure the lid onto the
basin. Alternatively, using string, tie aluminium foil securely
around the top.
Place the basin in a large saucepan and pour boiling water into
the saucepan around the basin to reach halfway up the sides of the
pudding. Place a lid on the saucepan and bring to the boil, then
simmer over low heat for 3 hours, adding water when necessary to
keep the water level constant. Remove the pudding from the saucepan
and serve with chocolate sauce, custard or brandy cream.
