Chocolate Christmas Pudding

This rich Chocolate Christmas Pudding is the perfect ending to any Christmas meal. While still bursting with traditional Christmas pudding flavour, the addition of chocolate will make it a favourite for the whole family.

Ingredients

Method

Place the butter, sugar, salt and spices into a large bowl. Beat until the mixture is light and creamy. Add the melted chocolate and beat until the mixture is smooth. Beat in the eggs, one at a time. Fold in the flour, mixed fruit and baking soda previously dissolved in the boiling water. Lastly, add the brandy and orange juice.

Grease a 2 litre pudding basin and pour in the mixture, making sure there is 2cm spare at the top to allow the mixture to rise in the basin. Fit a sheet of baking paper and secure the lid onto the basin. Alternatively, using string, tie aluminium foil securely around the top.

Place the basin in a large saucepan and pour boiling water into the saucepan around the basin to reach halfway up the sides of the pudding. Place a lid on the saucepan and bring to the boil, then simmer over low heat for 3 hours, adding water when necessary to keep the water level constant. Remove the pudding from the saucepan and serve with chocolate sauce, custard or brandy cream.

Hints & Tips

To prepare in advance, cook the pudding, cool and place in an airtight container. Refrigerate until it is needed then steam for a further 2 hours. To make individual puddings; place the mixture in greased moulds and steam for 45 minutes.

    Great idea! We havent tried this out but why not try the following...Lightly grease a 1.5-litre capacity heatproof, microwave-safe pudding basin. Line base with a circle of baking paper. Spoon mixture into basin. Smooth surface. Cover pudding with a double layer of baking paper & secure with kitchen string. Elevate basin on an upturned plate in microwave. Microwave on MEDIUM-LOW (30%) for 35 minutes. Stand in basin for 15 minutes. Insert a skewer into centre, to check if pudding is cooked.

    Can this be done in mircowave and or in slow cooker? Just love to do it this way especially when you can't stay and watch the pot boiling. from Jennifer
