Christmas Cranberry Spice Muffins

Quick to whip up for morning or afternoon tea to share with friends and family. Top with a fresh cherry for that extra special touch.

Ingredients

  • 3 cups flour
  • 4 tsp baking powder
  • 3/4 cup brown sugar
  • 1 Tbsp Gregg's Ground Mixed Spice
  • 125g butter
  • 1 1/2 cup milk
  • 2 eggs, beaten
  • 3/4 cup dried cranberries or craisins

Method

Preheat the oven to 200°C.

Grease 12 medium muffins tins.

Sift the flour and baking powder into a bowl. Add the brown sugar and Gregg's Mixed Spice and stir until combined.

Melt the butter, then add the milk and eggs and whisk well.

Make a well in the centre of the dry ingredients, pour in the liquid ingredients and add the cranberries. Mix gently until just combined.

Place spoonfuls of the mixture into the muffin tins and bake for 15 minutes or until they are golden and spring back when touched.

Hints & Tips

Sprinkle with icing sugar or for a festive touch, ice with cream cheese icing and top with a cherry.
