Christmas Fruit Mince

Everyone loves a fruit mince pie at Christmas! By matching this recipe with our Sweet Shortcrust Pastry Tarts recipe you will be able to bake impressive, traditional Christmas fruit mince tarts this holiday season.

Ingredients

  • 275g Shreddo Quality Shortening
  • 1 orange, juice & grated rind
  • 1 lemon, juice & grated rind
  • 150g mixed peel
  • 250g brown sugar
  • 250g currants
  • 1/4 tsp salt
  • 1 tsp Gregg's Ground Mixed Spice
  • 125g blanched almonds
  • 150g glace cherries
  • 100g dried apricots
  • 75g glace ginger
  • 500g sultanas
  • 500g raisins
  • 2 apples, peeled & cored
  • 1 1/2 cups brandy

Method

Place SHREDDO Quality Shortening , orange juice and rind, lemon juice and rind, mixed peel, brown sugar, currants, salt and Gregg's Mixed Spice in a large bowl.

Using a food processor, lightly mince the remaining fruit and nuts in batches and add to the mixture.

Pour over the brandy and mix well.

Cover with cling wrap and leave overnight, then mix well again before packing into clean sterilised jars.
