Cranberry Oat ANZAC Biscuits

On April 25th, New Zealanders all around the country will be celebrating ANZAC Day.  Why not try making our delicious Cranberry Oat ANZAC Biscuits this ANZAC Day?

15 - 20 minutes

Ingredients

  • 1 cup flour
  • 1 1/2 tsp Gregg's Ground Cinnamon
  • 1 cup coconut
  • 1 cup rolled oats
  • 3/4 cup sugar
  • 1/2 cup flaked almonds
  • 1 cup dried cranberries
  • 125g butter
  • 2 Tbsp golden syrup
  • 1/2 tsp baking soda
  • 1/4 cup boiling water

Method

Preheat the oven to 180°C.  Place the first seven ingredients in a large bowl.

Melt the butter, then blend in the golden syrup.  Dissolve the baking soda in the boiling water.  Pour the butter and baking soda mixtures into the dry ingredients and mix thoroughly.  Place heaped tablespoonfuls of the mixture about 5cm apart on a lightly greased oven tray.  Press down with a damp fork.

Bake in the preheated oven for 15 - 20 minutes or until golden.  Leave on the tray for 3 - 4 minutes, then transfer to a rack to cool.
