Crispy Seasoned Bread with Feta & Roasted Capsicum

Crispy Seasoned Bread with Feta & Roasted Capsicum

A great snack or starter. This recipe is quick and easy to make and is so tasty that everyone will be asking for more.

6 - 8 as a starter

Ingredients

Method

Preheat grill to 225°C.

Cut bread in half lengthwise and then into approximately 8 cm squares. Place on baking tray.

Mix olive oil with Gregg's Crushed Garlic and brush onto bread. Sprinkle with Gregg's Tuscan Style Seasoning and Gregg's Smoked Paprika.  Place under grill and cook until crispy and golden.

To prepare topping; crumble Feta and add capers, if used. Spread on grilled bread, top with slices of capsicum and garnish with basil leaves.

Hints & Tips

This bread is great without the Feta & herb topping to serve with soup or with your meal.

To roast capsicum:

Preheat grill to 220°C. Line a baking dish with foil. Cut capsicums in half and remove seeds and core. Place skin-side up on foil and place under grill. Grill until skin has blackened. Remove from heat and wrap the capsicums in foil. When cool enough to handle unwrap and remove blackened skins.

    i love using herbs to fancy up vegys, and i even add them to plain greek yoghurt as a dessert , thanks for the ideas, as i need to be more adventurous
