Curried Kumara Fritters with Smoked Salmon

Treat yourself to a tasty summer brunch, outside on the deck enjoying the sun, or make smaller fritters and serve as an appetiser for when friends drop in at the end of a hot day.

Ingredients

Method

Place the kumara, red onion, Gregg's Curry Powder, eggs and Gregg's Natural Sea Salt to taste in a bowl. Mix well.

Heat the oil in a frying pan over medium heat. Place tablespoonfuls of the prepared mixture into the pan; cook for a few minutes on each side or until the fritters are cooked through and golden brown.

Serve as a layered stack, alternating the fritters, sour cream and salmon slices.

Garnish with spring onion.

Hints & Tips

Make small fritters and serve single fritters topped with a little salmon and sour cream as a tasty appetizer.
