This scrumptious loaf can be used for morning teas or
lunch-boxes, or can make a great dessert.
Ingredients
- 250g dates, chopped
- 1 tsp baking soda
- 1 1/2 cups boiling water
- 2 cups self raising flour
- 1 Tbsp Gregg's Ground Cinnamon
- 3/4 cup brown sugar
- 1 cup Shreddo Quality Shortening
- 70g walnuts, chopped
- 2 eggs, beaten
Method
Place dates and baking soda in a bowl then pour over the boiling
water and set aside to cool.
Preheat oven to 180°C.
Grease a large loaf tin.
Sift the flour and Gregg's Cinnamon into a large bowl. Add the
brown sugar and SHREDDO Quality Shortening and rub with
fingertips to give a fine texture. Stir through the walnuts.
Add eggs and cooled date mixture.
Mix well then pour into loaf tin and bake for 50 - 60 minutes or
until when a cake tester inserted comes out clean.
Cool on a cake rack.
