Date & Walnut Loaf

This scrumptious loaf can be used for morning teas or lunch-boxes, or can make a great dessert.

Ingredients

Method

Place the dates, water, brown sugar and butter into a medium saucepan.  Cook over a medium heat until the sugar dissolves.  Bring to the boil, reduce the heat to low and simmer for 2 minutes.  Stir in the baking soda and set aside to cool.

Preheat oven to 180°C. Grease a large loaf tin.

Sift the flour and Gregg's Ground Cinnamon and Gregg's Ground Mixed Spice into a large bowl. Add the eggs, cooled date mixture and walnuts.

Mix to combine then pour into the loaf tin.  Bake in a pre-heated oven for 50 - 60 minutes or until a cake tester inserted comes out clean.

Cool on a cake rack.
