Ginger & Chocolate Shortbread

This delicious shortbread is sure to become a family favourite, and makes a great gift too.

Serves:
Makes approximately 50 biscuits

Ingredients

  • 2 cups flour
  • 1/2 cup cornflour
  • 1/4 tsp salt
  • 1 Tbsp Gregg's Ground Ginger
  • 250g butter
  • 1/2 cup chocolate bits
  • 1/2 cup caster sugar

Method

Preheat the oven to 170°C.

Sift the flour, cornflour, salt and Gregg's Ginger into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs, then add the caster sugar. Knead the mixture in the bowl until it becomes smooth and pliable. Add the choc bits and knead.

Shape into a roll and wrap in plastic wrap. Place in refrigerator to chill for 30 minutes until able to slice. Alternatively roll unchilled mixture into balls and place on lined tray and press down with a fork.

Bake in the preheated oven for 15 minutes or until pale golden brown. Remove from the oven.
