Glazed Christmas Ham

Christmas just wouldn't be complete without a glazed ham at the centre of the table.  This timeless classic that never disappoints will be loved by all the family, especially as Boxing Day leftovers!

Method

Pre-heat oven to 180°C.

Remove the rind and excess fat from the ham. Place the ham on a roasting rack in a deep roasting pan.

With a sharp knife, score the ham with deep cuts crossways and then diagonally to form a diamond pattern.

Mix together the orange juice, sugar, honey, mustard and Gregg's Ground Cardamom to make the glaze. Brush ham with a little of the glaze then press a clove into each diamond. Season with Gregg's Black Peppercorns and place in the oven.

Cook uncovered, for 1 hour 10 minutes, brushing with the glaze every 10 minutes.

Hints & Tips

Store your ham in a damp ham bag - or if you don't have one, use a clean pillowcase.  Rinse the ham bag in cold water and a little vinegar every couple of days.
