Green Curry Beef Wraps

These Green Curry Beef Wraps are perfect for a delicious and easy summer lunch that the whole family will love.

Ingredients

  • 1 Tbsp oil
  • 600g beef schnitzel or rump steak, thinly sliced
  • 1 green capsicum, thinly sliced
  • 2 Tbsp Gregg's Green Curry Paste
  • 8 burritos or tortillas
  • 4 ripe tomatoes, diced
  • 2 cups finely shredded lettuce
  • 1/2 cup sour cream

Method

In a large frypan heat oil over a high heat, add beef in batches, cooking each batch until well browned. Remove and set aside.

Reduce heat to medium, add Gregg's Green Curry Paste and capsicum, then cook for 1 minute. Return beef to pan and cook for 2 minutes or until beef is cooked through.

Heat burritos or tortillas according to directions on packet.

Divide lettuce and tomatoes amongst tortillas, top with green curry beef and a dollop of sour cream.

Wrap to enclose filling and serve immediately.

    Yummy, easy and fun to make. I prepared the meal and then the family assembled their own. Would definitely make again.

    I mixed sour cream into the mixture rather than on top of the wraps. YUM!!! A very easy and tasty meal!
