Quick and easy to make for lunch, or serve with boiled new
potatoes for a main meal.

- 3 Tbsp Gregg's Lemon Pepper Seasoning
- 500g chicken breast, sliced into 1 cm slices
- 1 Tbsp olive oil
- 200g salad greens, approx
- 1 red onion, sliced finely
- 2 oranges, peeled & cut into segments
- 1/2 telegraph cucumber, sliced
Method
To make the dressing, combine all the ingredients in a bowl and
whisk until well blended. Set aside.
Place the Gregg's Lemon Pepper seasoning in a plastic bag, add
the sliced chicken and toss until coated.
Heat the oil in a frying pan over medium heat. Add the chicken
and cook for 6 to 8 minutes or until it is cooked through.
Place the salad greens, onion, orange segments and cucumber in a
salad bowl and toss with the dressing. Top with the cooked chicken
and serve.
