Lemon Slice

Gregg's Crumble Mix makes a quick, easy base and then you just need to beat the topping ingredients together to create this simple and luscious Lemon Slice.

Ingredients

  • Base

  • Topping

    • 3 eggs
    • 1 1/2 cups caster sugar
    • 1/4 cup lemon juice
    • 1 1/2 tsp lemon rind, finely chopped
    • 1/4 cup flour
    • 1/4 tsp baking powder

Method

Preheat the oven to 160°C. Line the base and sides of a 27cm x 18cm x 3cm tin with baking paper.

Prepare the base. Place the Gregg's Classic Crumble Mix in a bowl, add the butter and toss with a fork until well blended. Press the mixture evenly over the base of the tin. Bake in the preheated oven for 15 minutes.

Meanwhile, prepare the topping. Beat the eggs in a bowl. Beat in the caster sugar and continue to beat until the mixture is light coloured. Beat in all the remaining ingredients except the icing sugar. Pour the mixture over the base.

Bake in the preheated oven for 30 to 35 minutes or until the centre of the topping is firm when tested with the point of a knife.

Stand the tin on a rack until cold, then remove the slice. Cut into bars with an oiled knife. Dust with icing sugar before serving.

    Free-range eggs are really yellow and gives this slice a beautiful colour. Really easy recipe - a good one for the kids to help with.
