Method
Pineapple
Place flour, Gregg's Ground Cinnamon and Ground Mixed Spice into
a resealable bag and shake well.
Peel, then cut pineapple into large chunks. Let pineapple
stand for 2 minutes.
Add pineapple to bag and shake to coat. Rest for 2
minutes, and then shake again to ensure even coating.
Place oil in pan and heat over medium heat.
Cook pineapple on each side until browned, turning once
during cooking.
When cooked, place pineapple on plate.
Sauce
Place sugar into non-stick pan, add Gregg's Ground Cinnamon and
Ground Mixed Spice and heat on a low to medium heat.
Let it caramelize, then add a couple of knobs of butter and
stir. Cook for several minutes to create a smooth
sauce. Pour over pineapple.
