This zesty flavourful salad adds a wonderful splash of colour to
any meal. Serve as a side dish, or accompany with fresh
crusty bread for a light meal.
Ingredients
- 1 lebanese cucumber, sliced
- 3 roma tomatoes, halved lengthways & sliced
- 2 eggplant, sliced
- 1 red onion, sliced
- 200g feta cheese, cubed
- 75g baby spinach leaves
Mediterranean Dressing
Method
Place all dressing ingredients in a jar with a lid and shake to
combine.
Pour dressing over cucumber, tomatoes, eggplant, onion and feta
and leave to marinate for 15 - 20 minutes.
Place spinach leaves in a salad bowl and add marinated
vegetables to serve.
