Pesto Stuffing

Create your own delicious pesto stuffing using Gregg's Stuffing mix as a base. Try different ingredients depending on what you have at hand.

Ingredients

  • 1 Tbsp olive oil
  • 1 onion, finely chopped
  • 1 red capsicum, finely chopped
  • 3 Tbsp prepared basil pesto
  • 50g pine nuts, toasted
  • 1 packet Gregg's Homestyle Stuffing Mix
  • 1 cup water

Method

Heat the oil in a saucepan over medium heat, add the onion and capsicum and cook for 3 to 4 minutes or until the onion is soft.

Remove from the heat; add the pesto, pine nuts and stuffing mix. Add the water and mix until well combined.

Hints & Tips

Use to stuff chicken, turkey, boned leg of lamb, beef roast or schnitzels, just before cooking.

Alternatively use as a side dish.  Simply roll heaped tablespoons of mixture into balls; place on a greased oven tray or add to the roasting pan and cook for approximatley 20 minutes.
