Spicy Apple Bread & Butter Pudding

An old favourite that is still popular with the whole family today.  Try this classic pudding for a nostalgic finish to a winter meal.

Method

Preheat the oven to 180°C.

Whisk the eggs, cream, milk, sugar and Gregg's Nutmeg together. Cut the vanilla bean in half and scrape the seeds into the egg mixture.

Butter the bread on one side. Dip each slice of bread into the egg mixture and place half of the bread into a 2 litre capacity ovenproof dish.

Add the apple slices then follow with another layer of the remaining fruit bread.
Pour the remaining egg mixture over the bread. Cover with foil and leave to stand for 10 minutes.

Bake, covered, in the preheated oven for 45 minutes then remove the foil and bake for a further 15 minutes until the top is golden and custard is set.

Dust with icing sugar to serve.

Hints & Tips

Serve with sweetened whipped cream flavoured with a few gratings from a Gregg's Whole Nutmeg and the seeds scraped from a Gregg's Vanilla Bean.
