Sweet Shortcrust Pastry Tarts

This is a delicious sweet pastry suitable for any sweet pies or tarts.

Ingredients

  • 2 cups plain flour
  • 3/4 cup Shreddo Quality Shortening
  • pinch of salt
  • 2 eggs
  • 1 cup caster sugar
  • water, if needed

Method

Mix flour, SHREDDO Quality Shortening and salt in a bowl.

In a food processor or bowl with a beater beat the eggs and sugar until pale and creamy. Add to the flour mixture and mix to a firm dough adding a little cold water if needed. Roll the dough into a ball, wrap in plastic wrap and chill for approximately 10 - 15 minutes.

Preheat the oven to 200°C and grease medium muffin or tart tins.

Roll out the pastry and cut circles to fit the tins. Cut star shapes out of the scraps for lids.

Place tablespoonfuls of fruit mince or filling of your choice in the pastry cases and top with pastry stars.

Bake in the preheated oven for 15 - 20 minutes, or until the pastry is golden brown.

When cool, dust with icing sugar before serving.
