Syllabub

Syllabub is a traditional English dessert dating back to the sixteenth century.  This simple and elegant dessert is popular for celebrations and special occasions.

Ingredients

  • 2 Tbsp caster sugar
  • 3 Tbsp Cointreau or Grand Marnier
  • 2 Tbsp lemon juice
  • 2 tsp finely grated lemon zest
  • 2 Tbsp orange juice
  • 1/4 tsp Gregg's Ground Cardamom
  • 1 cup cream

Method

Combine all the ingredients except the cream in a bowl and leave to stand for 1-2 hours.

Whip the cream until lightly thickened. Add the fruit juice mixture and whisk until the mixture just holds its shape.

Chill until ready to serve.

Hints & Tips

Serve spoonfuls on top of fruit jelly piled into small glasses and accompany with Brandy snap crisps, Syllabub makes an excellent dessert.
