This light and delicious salad with the aroma and flavours of
Thailand tastes amazing and is quick and easy to prepare.
Ingredients
- 400g beef fillet
- 2 Tbsp Gregg's Coriander & Garlic Paste
- 1/4 red cabbage, finely sliced
- salad greens
- snow pea shoots
- 1 orange capsicum, cut into strips
- 1 cup cherry tomatoes, cut in half
- crispy noodles
Dressing
Method
Preheat the oven to 200°C.
Brush the beef fillet with the Gregg's Coriander & Garlic
Paste. Place in a roasting dish and roast in the preheated oven for
20 minutes, or until it is medium rare.
Leave to rest for a few minutes.
Toss together the cabbage, salad greens, snow pea shoots,
capsicum and cherry tomatoes. Arrange on plates and top with slices
of rare beef and crispy noodles.
Make the dressing by whisking together the dressing ingredients
and pour over the salad.
