Translated from Italian as 'pick me up', this is a truly
decadent yet uplifting way to finish a meal!
Ingredients
- 1 Tbsp Gregg's Cafe Gold Classic Freeze Dried Coffee
- 1 1/4 cups boiling water
- 2 Tbsp Marsala, sweet Sherry, Dessert wine or Muscat
- 1/4 cup icing sugar
- 250g mascarpone
- 1 tsp vanilla essence
- 1 cup cream
- 24 sponge finger biscuits
- cocoa powder for dusting
- 50g dark chocolate, grated
Method
Dissolve the coffee with the boiling water, add the marsala,
sherry or brandy to the coffee mixture and set aside to cool.
Place the icing sugar, mascarpone and vanilla essence in a bowl.
Beat with an electric mixer until smooth.
Beat the cream until softly whipped and fold into the mascarpone
mixture.
Arrange half of the sponge finger biscuits over the base of a 2
litre bowl, pour over half of the coffee mixture and spoon in half
of the mascarpone mixture. Cover with biscuits, remaining coffee
mixture and mascarpone mixture.
Dust the top with cocoa and grated chocolate and refrigerate for
2 hours prior to serving.
If desired, prepare individual tiramisu in glass dishes.
