Bring the flavours of Italy to your table with this great
stuffed schnitzel recipe - its easy to prepare and the
flavour combination of Tuscan herbs, tomato and olives makes this
into something really special.

Pre-heat the oven to 200 ÂșC.
Mix the pasta sauce, Gregg's Tuscan Herb Crusting Blend and
olives together well until a stuffing type consistency is formed.
Lie the pieces of schnitzel out and spread a thin layer of the
stuffing over, leaving about one inch gap around the
edges. Roll up and secure with cotton string or a cocktail
stick.
Heat the olive oil in a frying pan over a moderate heat, add the
rolled schnitzels two at a time so that they brown well on all
sides.
When they are all browned, transfer to an oven proof dish and
roast in the oven for another 20 minutes, until cooked through.
Serve with roasted vegetables and more pasta sauce.
