Vanilla Poached Stone Fruit

Delicious with peaches, nectarines and apricots this is a simple idea for entertaining.

Ingredients

Method

Place the sugar and water into a medium saucepan and cook over low heat until the sugar has dissolved.

Split the Gregg's Vanilla Beans and scrape the seeds into the saucepan. Add the cinnamon quill and fruit.

Poach gently with the lid on, for 10 minutes or until the fruit is just soft.

Serve with vanilla mascarpone (flavour mascarpone by scraping seeds from a vanilla bean).
