A tasty light meal bursting with fresh citrus flavour makes a
great summer dish to share with friends and family.
Ingredients
Marinade
Salad
- 1 bunch asparagus, sliced diagonally or 1 cup snow peas
- mesclun salad mix
- 1 cup cherry tomatoes
- 1 avocado, cut into chunky pieces
Dressing
Method
Combine the marinade ingredients in a bowl. Add the meat and mix
well. Cover and refrigerate for 40 - 50 minutes.
While the meat is marinating, prepare the salad. Cook the
asparagus or snow peas for 1 - 3 minutes or until tender but still
crisp. Rinse under cold running water, then drain.
Place the salad mix on a serving platter. Add the asparagus or
snow peas, cherry tomatoes and avocado.
Prepare the dressing. Combine the olive oil, orange juice and
Gregg's Sweet Chilli Sauce in a bowl. Season with Gregg's Sea Salt
and Black Pepper, and whisk until well blended.
Heat the oil in a frying pan over high heat. Add the meat and
stir-fry for 3 - 4 minutes or until brown and just cooked. Place
the meat on top of the salad. Pour over the dressing and serve
immediately.
