How to Cook

  1. Place the peaches or apricots, carrots, pecan nuts, Gregg’s Sesame SeedsGregg’s Ground Ginger, honey, oil, zest and 1/3 cup of the measure desiccated coconut in a food processor. Process until finely chopped. Add lemon juice and process until a sticky mixture forms.
  2. Place remaining 1/3 cup desiccated coconut on a plate. Roll mixture into 18 small balls. Roll in coconut to coat. Place on a tray and refrigerate for 2 hours or until firm. Store in an airtight container in the fridge for up to 1 week.

  • ½ cup dried peaches or apricots, chopped
  • 1 cup grated carrots
  • 1 cup pecan nuts
  • 2 Tbsp Gregg’s Sesame Seeds
  • 1 tsp Gregg’s Ground Ginger
  • 1 Tbsp honey
  • 1 ½ Tbsp vegetable or coconut oil
  • 1 tsp lemon zest
  • 2/3 cup desiccated coconut
  • 1 Tbsp fresh lemon juice
