Place the peaches or apricots, carrots, pecan nuts, Gregg’s Sesame Seeds, Gregg’s Ground Ginger, honey, oil, zest and 1/3 cup of the measure desiccated coconut in a food processor. Process until finely chopped. Add lemon juice and process until a sticky mixture forms.
Place remaining 1/3 cup desiccated coconut on a plate. Roll mixture into 18 small balls. Roll in coconut to coat. Place on a tray and refrigerate for 2 hours or until firm. Store in an airtight container in the fridge for up to 1 week.
