Ground White Pepper
Pepper is obtained from the fruits of a woody evergreen climber that is native to the evergreen forests of the Western Ghats of South India. Depending on harvest time and processing, peppercorns can be black, white, green and pink/red. White pepper is the dried, unripe berry with its black husk removed.Pepper is used by virtually every culture on earth and lends itself to both savoury and sweet dishes. White pepper is commonly used in dishes where cracked black peppercorns would be visually undesirable. It is slightly less aromatic and flavoursome than black pepper, with its heat at the forefront, therefore, white pepper is particularly useful to have in dishes where one would want more of the black pepper 'bite', but without dominating other flavours.
